Ingredients
12 servings
2 ¼ cupsAP flour
1 cuplight brown sugar
½ cupsugar
½ cupsalted butter
½ cupmargarine
1 cupfine cornmeal
2eggs
¼ cuphoney
1 Tbspvanilla
1 Tbspcornstarch
1 tspsalt
1 tspbaking powder
Honey Buttercream
Instructions
Preheat oven to 350°F
Step 1
Line baking sheet with parchment paper.
Step 2
Add butter, margarine, & sugars to bowl; mix using paddle attachment (3 min.) until it has a creamy texture.
Step 3
Add eggs, vanilla, & honey to bowl; mix until smooth.
Step 4
Add dry ingredients to wet ones; mix until the dough just comes together.
Step 5
Use 1/2C measuring cup to scoop out dough. Roll dough into a ball & place on cookie sheet. (6 cookies per sheet.)
Step 6
Bake (15 min.) until edges of cookie are slightly brown, but middle is still a little soft.
Honey Buttercream Frosting
Step 7
While cookies cool, make honey buttercream by adding the honey, butter, & vanilla to bowl; beat (5 min.) (The air will help the butter double in size.)
Step 8
Add powdered sugar to butter; beat (another 5 min.) until frosting is smooth. (You can add splash of milk while mixing if you need more moisture.)
Step 9
Once cookies are completely cooled, pipe a lg. dollop of buttercream on top each cookie.
Step 10
Drizzle with honey & enjoy!
