Instructions
Step 1
Sauce: stir together chicken stock, oyster sauce, soy sauce, corn starch, and sesame oil. Set aside


Step 2
Heat a pan to high add oil. Once you see whisps of white smoke, add the ginger and garlic, and cook until light brown and fragrant, 20 seconds. Stir in chicken and cook until medium, 1 minute

Step 3
Add noodles, carrots, and bok choy to the pan and cook until tender, 1 minute.


Step 4
Stir sauce, pour into pan and incorporate all ingredients well.
Step 5
Continue to cook until the chicken is cooked all the way and the sauce starts to bubble and thicken. Garnish with scallions
