Instructions

Step 1
Begin with roughly chopping the vegetables and placing in a large pot with the peppercorns.

Place in the ham and fill with water until submerged.
Step 3
Put onto boil. Once the frothy bits float to the surface (the scum) scoop out with a spoon. Turn down to a light simmer and leave for 1hr 30 mins.

For the glaze, add the ingredients to a mixing bowl and stir until well combined.

Remove the ham from the water and keep the broth (perfect for soup, risotto etc)
Step 6
Remove the skin with a sharp knife and discard. Then score the fat into diamond shapes. Place a clove in each diamond.
Step 7
Heat the oven to 180c/350f. Pour over half of the glaze and brush evenly. Place in the oven for 15 minutes.

Remove and brush over more glaze. Add back to the oven for another 15 minutes.

Remove and leave to rest for 30 minutes.
