Ingredients

2 tablespoonscooking oil
0.25 poundbeyond meat
mild, or hot
vegan sausage
2onions
chopped
3cloves garlic
minced
1 poundkale
tough stems removed, leaves
washed well and shredded (about 1 1/2 quarts)
3 ⅓ cupscanned diced tomatoes
with their
2 x 15 ouncejuice
cans
1 ¼ teaspoonssalt
½ teaspoonblack pepper
fresh-ground
4 cupscan
drained and rinsed ned
2 x 19 ouncecannellini beans

Instructions
Step 1
1. In a Dutch oven, heat 1 tablespoon of the oil

over moderate heat. Add the sausage and

cook, breaking the meat up with a fork, until

the it loses its pink color, about 2 minutes.

Add the remaining tablespoon of oil to the

pan and then stir in the onions. Cook, stirring

occasionally, until the onions start to soften,

about 3 minutes.

2. Add the garlic and kale to the pan and cook,

stirring, until the kale wilts, about 2 minutes.
