Chicken and Parmesan Sausage Rolls

You can swap sweet potato for 2 carrots. Delicious also with seeded mustard instead of Dijon. Feel free to add herbs or spices of choice, dill would be delicious!

Instructions

Step 1
Preheat oven to 200°c (180°c fan forced). Line 2 baking trays with baking paper.
Step 2
Combine chicken mince, diced onion, grated sweet potato, diced celery, garlic, stock powder, breadcrumbs and Dijon mustard.
Step 3
Slice thawed pastry sheets down the middle. Distribute mince mixture along the middle of the pastry halves.
Step 4
Brush one side of the pastry with egg wash. Roll pastry over to encase mixture, seam side down.
Step 5
Slice each long roll into fours and place onto a lined baking tray.
Step 6
Brush the tops of each mini sausage roll with egg wash.
Step 7
Bake in oven for 25-30 minutes or until puffed and golden. Allow to cool slightly before serving.
