Instructions

Step 1
Preheat oven to 400°F/200°C. Line a baking sheet
Step 2
with parchment paper or foil. Cut English muffin in half and toast in oven while you prepare other ingredients.
Step 3
Spray a skillet with cooking spray and place over medium heat.
Step 4
Add bacon and cook until crispy, then add vegetables.
Step 5
Cook until spinach is wilted.
Step 6
Remove vegetables and bacon.
Step 7
Spray skillet with cooking spray again, then scramble eggs. Return vegetable-bacon mixture to pan and stir to combine.
Step 8
Top each muffin half with egg mixture and cheese.
Step 9
Place baking sheet back in oven and cook until cheese has melted, about 5 minutes.
Step 10
Sprinkle with basil before serving.
Step 11
Makes 1 serving.
