Chili Crisp Eggs on Miso Butter Toasted Focaccia

For the miso butter toasted focaccia
focaccia
4x4 inches - I used my chili crisp focaccia recipe
2 tablespoonssalted butter
softened
1 teaspoonwhite miso
½ teaspoonwhite sesame seeds
1 ½ teaspoonsscallions
finely diced
To assemble the toast
Instructions
Step 1
Preheat a large frying pan to a medium heat.
Step 2
Place the softened butter and miso into a small bowl and stir with a spoon until well incorporated. Stir in the diced scallions and sesame seeds.
Step 3
Slice the slab of focaccia horizontally and then spread each half with the miso butter. Place butter side down into the preheated frying pan. Toast over a medium heat until the buttered side of the bread is golden brown and crispy.
Step 4
While the bread is toasting, fry your eggs. Drizzle a bit of the chili crisp oil into the frying pan, heat it up to a medium high heat and then crack both eggs into the pan. Add a splash of water into the pan and cover with a lid or plate to trap the steam in. Turn the heat down to medium. Remove the lid when the whites are completely set, and the yolks are still runny.
Step 5
Assemble by placing the toasted focaccia onto two plates (or one if you’re hungry!). Place the fried egg on top of the toasted bread and scatter over some flaky sea salt, white sesame seeds and black sesame seeds. Then drizzle over as much chili crisp as you can handle and finish with a garnish of diced scallions. Enjoy!
