Instructions
For the roasted garlic & tomatoes
Step 1
On a parchment lined baking dish add your halved tomatoes (I used Roma tomatoes), and your bulb of garlic (with the tail chopped off) and drizzle 2 tsp cooking oil on top and bake at 475 degrees covered with foil for 15-20 minutes.
For the pasta
Step 2
Add 2 tbsp salt to a large saucepan with water * about 5-6 cups* (this increases the boiling point so that your water comes to a boil faster). Once your water is at its boil add your pasta. Drain and rinse your pasta with cold water (this removes some of the starch). In the same saucepan your cooked your noodles in, add your butter and allow to melt. Add your pasta back in the pot and add you roasted veggies and mix. Add your ricotta and mix again until it melts (from the heat). Add your spinach and allow to cook down. Mix in your Parmesan cheese (I used grated, shredded works too). Top off with more Parmesan and parsley for color and flavor. Serve and Enjoy!
