Peanut Sauce for noodles, salads, etc

A great dip or dressing. Quick and easy, and you can make ahead. I usually make it without a lot of heat, but you can add as much as you wish. Just remember that the flavors will intensify as they develop.
Put it in a airtight jar, and it will keep for 2 weeks in the fridge. To thin it out, add the cooking water from noodles or a couple of tablespoons of coconut milk.

Step 1
Combine all ingredients in a food processor, except the water. Purée until smooth. Gradually pour in the water until desired consistency. Taste for seasoning and heat, and adjust as needed. Remember that flavors will intensify as they develop.
Step 2
The sauce is now ready for tossing noodles or salad. If using as a dip, you can serve room temperature or chilled. Spoon any leftover sauce into an airtight jar and put in the fridge. Will keep for up to 2 weeks.
