Step 1
Sauté butter with carrots celery onion and garlic. Salt and pepper to taste. Add the broccoli, whipping cream and chicken stock to the pot, and bring to a simmer over medium high heat. Simmer uncovered until broccoli is tender stirring occasionally. Add zanthum gum to thicken. Gradually stir in room temperature shredded cheddar cheese until melted. Simmer until soup is thickened to desired consistency, about 10 minutes.
