Instructions

Step 1
CCP: Always wash hands before preparing food.

CCP: Thoroughly rinse fresh blueberries with cool running water.

1. Preheat oven to 400o F. Grease muffin cups or line with paper liners.

2. Mix together flour, sugar, salt and baking powder in a large bowl. Set aside.

3. In a separate bowl, whisk oil, egg, milk and applesauce.
Step 6
CCP: Wash hands after cracking raw eggs.

4. Stir the liquid ingredients into the flour mixture until moistened.
Step 8
Lightly stir in blueberries.
Step 9
5. Spoon the batter into the prepared muffin cups, filling them 2/3 full.

6. Bake muffins in preheated oven until they rise and the tops are golden brown, about 20 minutes. A toothpick inserted into the center of muffin should come out clean.
