Instructions

Step 1
In a medium size frying pan, over medium heat add 1-2 Tbs Olive Oil then add onions and cherry tomatoes. Cook until softened, stirring frequently.
Step 2
Add garlic, sundried tomatoes, and tomato paste. Cook for 2 minutes, stirring regularly.
Step 3
In a small bowl make cornstarch slurry by mixing the water and cornstarch.
Step 4
Pour in Chickpeas, stock, and slurry. Simmer for 5 minutes.
Step 5
Add spinach, cook until wilted.
Step 6
Stir in parmesan, cream cheese, and lemon.
Step 7
Taste for seasoning and enjoy.
