1 ½ cupsonion
chopped

2cloves garlic
minced

2 teaspoonsolive oil

2 cupszucchini
shredded

½ cupgreen bell pepper
chopped by hand

½ cupsweet red pepper
chopped by hand

¼ cupchicken broth

¼ cupcider vinegar

1bay leaf

¼ teaspoonallspice
ground

⅛ teaspooncrushed red pepper
ground with allspice

1 tablespoonsugar

1 tablespooncanning salt
Instructions
Step 1
(Onion and zucchini can be shredded in food processor. Peppers are best chopped by hand.) Sauté onion and garlic in olive oil 2 minutes. Add the rest of ingredients and cook over medium-high heat (to cook away excess liquid) about 10 minutes. Remove bay leaf. Ladle into clean, hot jars, seal, and process in boiling water bath 10 minutes. Makes 1-2 pints relish.
