Step 1
1: Whisk the butter and the sugar until light and fluffy then add in the egg and vanilla and beat until fully incorporated. Fold in the flour, salt and ¾ of the chocolate chips. Divide the mixture in 2, take half of the mixture and spread this into the bottom of a greased 9” cast iron skillet. Pop the peanut butter cups in an even layer then scatter in some chocolate chips and Rolo’s, top with the remaining batter then flatten out.

2: Sprinkle on the remaining chocolate then cook in an oven set at 180c / gas mark 4 for 45-50 minutes. If your cookie is browning too quickly then cover with a piece of tin foil. Leave to cool in the pan for 20-30 minutes before topping with a ball of ice cream.
