Instructions

Step 1
Whisk the butter and the sugar until light and fluffy then add in the egg and vanilla and beat until fully incorporated. Fold in the flour, salt and ¾ of the chocolate chips. Divide the mixture in 2, take half of the mixture and spread this into the bottom of a greased 9” cast iron skillet. Pop the peanut butter cups in an even layer then scatter in some chocolate chips and Rolo’s, top with the remaining batter then flatten out.
Step 2
Sprinkle on the remaining chocolate then cook in an oven set at 180c / gas mark 4 for 45-50 minutes. If your cookie is browning too quickly then cover with a piece of tin foil. Leave to cool in the pan for 20-30 minutes before topping with a ball of ice cream.
