Ingredients

For the base

2 cuprolled oats
ground to a flour

2 Tbspcoconut oil
melted

2 Tbspdairy free milk

2 Tbspmaple syrup

1 tspvanilla extract

salt
For the date caramel filling
For the chocolate topping
Instructions
Step 1
1. Line a loaf tin with baking paper
Step 2
2. In a high speed blender, pulse the oats until they're ground down to a flour (if you haven't already)
Step 3
3. Add the base ingredients to a mixing bowl and stir until a sticky mixture comes together - press this mixture into the bottom of the tin.

4. In a food processor, add the date caramel ingredients and pulsse until almost smooth (there will be some bits but it doesn't matter)

5. Spoon this on top of the base and spread so it's even. Place in the fridge or freezer while you melt the chocolate.
Step 6
6. Melt the chocolate and coconut oil together in a Bain Marie or in the microwave, pour this over the base with a little sprinkle of flaky sea salt and place back in the fridge for an hour to set.
Step 7
7. Remove and cut into slices, enjoy! Store in an airtight container in the fridge.
