Step 1
Start by seasoning the meat. Mix salt, pepper and mustard powder together and rub over the steaks. Set aside.
Step 2
Destem the large mushrooms. Slice 200g of mushrooms, 2 of the garlic cloves and 1 onion, and finely chop 50g mushrooms, the mushroom stems and the other garlic and onion. Gently fry the veg in 2 separate pans

Whilst the veg is cooking, peel and chip the potatoes. Wash and PC for 0 minutes. Drain, then set to AC for 5 mins. Spritz with oil and sprinkle with seasoning of choice, the AC for 30 mins, tossing halfway through
Step 4
Add the well done steak to the griddle and cook for 10 mins either side
Step 5
Preheat the oven to 180C
Step 6
Once the well done steak is done, cook the rare steak for 2 min, and set both aside to rest
Step 7
Grate the low fat cheddar. Stuff the mushrooms with the chopped veg, and sprinkle with the cheddar. Place on a baking tray with the rinsed tomatoes, spritz with oil and season and cook in oven for 10 mins
Step 8
Add the beef stock and the worcester sauce to the sliced veg, and reduce. Just before serving, remove from the heat and stir in 3-4 tbsp of fromage frais
Step 9
Assemble and serve
