Instructions
Step 1
Preheat oven to 400°F;
Step 2
Wash and cut peppers in half lengthwise discard seeds,
lay cut-side up in a lightly oiled baking dish, season with salt/pep bake 15-20 min until peppers are tender but still hold their shape

Meanwhile, chop ¼ cup spinach and mushroom
Step 4
Remove peppers from oven, divide chopped spinach and mushrooms among pepper halves,
Step 5
Scramble egg, egg whites and water then pour half into each pepper half (don't overfill!) + season with salt/pep
Step 6
sprinkle 1-2 tbsp cheese (any kind Cheddar, Feta etc) onto each pepper and carefully return to oven;
Step 7
bake 15-25 min more until eggs are set + cheese has melted
