I wanted to put my own spin on these using the microwave to make them in just a minute or two (usually they take around 20 minutes in a traditional oven). I like to think of them as a cross between oatmeal and cake. They’re delicious, nutritious and and they’re a fun and different way to eat oatmeal. Instructions
Step 1
In a microwave safe bowl combine softened peanut butter, maple syrup and milk.
Step 2
Add the oat flour, baking powder and cocoa powder. Combine well and make sure to dissolve the cocoa lumps. Scrape the bottom of the bowl as the peanut butter settles to the bottom of the bowl.
Step 3
Stir in chocolate chips and microwave for around 1 minute and 30 seconds to 1 minute and 45 seconds.
Step 4
Every microwave is different so please adjust timing. DO NOT over bake
