Instructions

Marinade

Step 1
Combine all ingredients.

Rinse and pat lamb dry
Step 3
Cover lamb with marinade with aluminum foil for a minimum of 8 hours in the refrigerator.

To Cook

Step 4
Preheat oven to 400 degrees.
Step 5
Put lamb with marinade in large roasting pan.
Step 6
Roast uncovered for 30 minutes
Step 7
Reduce oven temperature to 325 and continue roasting for 90-120 minutes.
Step 8
Internal temperature should be 135 for medium rare a f 140 for medium.
