Ingredients

Marinade
1.2kgwhole chicken
2 tablespoonnatural yoghurt
4 tablespoonolive oil
1 tablespoongarlic ginger paste
½ tablespooncumin powder
½ tablespoonblack pepper
1 tablespoonpaprika
½ tablespooncoriander powder
1 tablespoonKashmiri chilli powder
1 teaspoonturmeric powder
1 tablespoonkasuri methi
½ tablespoongaram masala
0.5lemon juice
Freshly squeezed
4 teaspoonsalt
or to taste
Compound butter
Instructions
Step 1
Leave chicken out at room temperature for one hour
Step 2
Make marinade using ingredients listed
Step 3
Make the compound butter to stuff under skin, ensure butter is not too soft
Step 4
Loosen the skin of the chicken then insert the butter underneath skin
Step 5
Then add marinade and coat well, ensure you stuff the inside with the marinade too
Step 6
Tie the legs with butchers twine and tuck the wings in
Step 7
Cover and refrigerate overnight
Step 8
Bring chicken out and leave out for about 30 mins before putting it in oven
Step 9
Preheat oven to 200c
Step 10
Put chicken on a baking tray
Step 11
Bake the chicken on 200c for 45 mins, flip over and cook for a further 30 mins until internal temp is 165f. That's 1hr 15mins in the oven.
Step 12
Let it rest for 15 mins before carving up
