Step 1
Preheat oven to 425F

Juice one lemon
Step 3
Mince 4 garlic cloves

Add olive oil, lemon juice, Dijon, garlic, oregano, thyme, salt and pepper to a bowl

Stir mixture and add half the mixture to chicken thighs and marinate for 15 minutes

Chop zucchini, bell pepper, and red onion and place on a non-stick sheet pan
Step 7
Coat veggies with reserve marinade
Step 8
Place chicken on veggies
Step 9
Place in oven at 425F for 30 minutes
Step 10
Add cherry tomatoes, olives, and feta and place back in oven for 15 minutes
