Ingredients
4 servings
Croquette
3russet potatoes
1 cupsauerkraut
drain as much liquid from the sauerkraut
8 slicescorned beef
4 ozSwiss cheese
cut to 8 pieces
1 tablespoonbutter
¼ tspsalt
⅛ tsppepper
¼ cupflour
2eggs
1 cuppanko
oil
for deep frying

Instructions
Potato and Meat Mixture
Step 1
Make sure corn beef and swiss cheese are room tempter. Therefore the swiss cheese will melt inside.
Step 2
1. Peel and cut potatoes to 4 pieces. In a steamer , cook potatoes about 15-20 minutes. Check if a skewer goes through the potato easily.
Step 3
Meanwhile, drain water of sauerkraut, and remove liquid of sauerkraut by paper towel. Chop the sauerkraut, and set aside.
Step 4
Cut swiss cheese to bite size, and wrap by sliced corn beef. Make 8 of these, and put aside.
Step 5
Drain water from the cooked potato, transfer to a large bowl. Smash potato, but keep some potato chunks for texture. Add butter.
Step 6
Add sauerkraut, salt and pepper, and mix well.
Step 7
Divide potato mixture to 8. Make a patties by hand, Put corn beef wrapped swiss cheese inside.
Step 8
Prepare tray or bowls. 1st is for flour, 2nd is for panko, and 3rd is for eggs. (Crack eggs into bowl, and mix well)
Step 9
Coat each patty by this order. Flour > Egg > Panko
Step 10
Bring the oil to 350F, and deep fly 3 or 4 croquettes at a time. They are already cooked inside, so cook until they are golden brown.
Step 11
In a small bowl, mix listed Russian dressing dip ingredients well, and serve with croquettes.
