Instructions
Step 1
To make the cauliflower, preheat the oven to 375F. Spray a medium baking sheet with nonstick spray.
Step 2
Cut the cauliflower into 1-inch florets and set them aside.
Step 3
Set 3 medium bowls in a row to form a dredging station. In the first bowl, whisk together the milk, vinegar and hot sauce. In the second bowl, whisk ogether the flour ands alt. Add the breadcrumbs to the third bowl.
Step 4
Dip a cauliflower floret in the milk mixture, then put it in the flour, coating it completely. Dip it in the milk mixture again, then back in the flour, dip it in the milk mixturea d third time, then coat it completely in the breadcrumbs. Place the floret on the prepared baking sheet.
Step 5
Repeat the preceding steps with all of the cauliflower florets. i like to dredge 3 or 4 florets at a time to speed up the process.
Step 6
Spray the cauliflower with nonstick spray and bake for 10 minutes. Flip the cauliflower and bake for 14 to 20 minutes more, or until it is brown and crispy.
Step 7
After flipping the cauliflower, make the sauce. In a medium saucepan, over medium low heat, combine the butter, oil, hot sauce, agave syrup, smoked paprika, garlic powder and salt. Heat the mixture, whisking to combine, until the butter has melted and all the ingredients are fully incorporated, 2 to 3 minutes. Remove the saucepan from the heat.
Step 8
When the cauliflower is done, transfer it to a large bow and pour the sauce on top. Toss to coat all the cauliflower in the sauce. Top with scallions.
