Oatmeal Raisin Cookies

Instructions

Step 1
Brown both sticks of butter over medium heat then allow to cool to room temperature. Lightly toast Oats, set aside.
Step 2
In a separate bowl, combine AP flour, cinnamon powder, and baking soda. Set aside.
Step 3
Cream together the cooled brown butter, brown and g sugar until light and fluffy. Add the eggs and vanilla extract and mix until incorporated.
Step 4
Add the flour mixture and mix until combined, about 10 seconds. Do not over mix. Stir in the toasted oats and raisins.
Step 5
Drop the cookies on a lined baking sheet two inches apart. For best results, chill for up to 24 hours. If time doesn't permit, rest in the freezer for 30 minutes.
Step 6
Bake in an oven preheated to 350 F for 10-15 minutes or until the edges are slightly browned and the center is still soft. Transfer cookies to a wire rack and cool completely before storing.
