Step 1
Get a mason jar or a jug slightly bigger than your stick blender and add the garlic apple cider vinegar salt pepper vegan Dijon mustard cayenne coconut cream and oil . Put the stick blender to the bottom and pulse repeatedly . Keep pulsing until you see the creamy thick Mayo start to form on the top of the jar . Now you can slowly lift the blender up and keep pulsing until it’s all thick and creamy . At this point stop as overblending will make it thin and watery . Side note if you do this in a food processor add all the ingredients besides the oil then blend and drizzle the oil on top on a slow steady stream . Blend it until it becomes thick and creamy

Finely chop the chives then add them in to the mayonnaise. Store in a sealed sterilized jar in the fridge unopened 1 month . Once opened use within a week
