Step 1
Heat wok and add oil. Heat oil until smoking and then add eggplant and fry until browned and cooked. Move eggplant to side of the wok, reduce heat and fry garlic, ginger, pepper for 1 minute. Mix eggplant with vegetables, salt, soy sauce and oyster sauce. Add spring onions. Serve.
