Instructions

Debone and Marinate Wings

Step 1
Debone wings by cutting the tendons along the joint and peeling back the wing on a cutting board (refer to my wing deboning video on TikTok/Instagram for an in-depth tutorial).

Submerge wings in buttermilk and pickle juice for at least 2 hours, preferably overnight.

Mac n' Cheese

Step 3
Make a roux by melting butter in a pot over medium heat and whisking in AP flour until a wet-sand-like texture forms. Slowly add milk until a thickened sauce forms.

Remove from heat and add cheeses, nutmeg, smoked paprika, and salt to taste.

Add cooked macaroni noodles and cool to room temp. Then place in a piping bag.

Buffalo Sauce

Step 6
Melt butter in a pot over medium-low heat. Add hot sauce, mirin, and msg. Remove from heat.

Frying Wings

Step 7
Take wings out of the buttermilk brine and pat dry, Pipe in mac n' cheese stuffing.

Heat a pot of oil to 325 F.

Make seasoned flour by combining AP flour, potato starch, garlic powder, smoked paprika, and white pepper.

Step 10
Dredge wings in flour and fry until just golden, about 2-3 min. Heat oil to 350 F and fry wings again for 2-3 min until golden brown. Toss with buffalo sauce and enjoy!
