Baked Patatas bravas

The original recipe uses a kind of baby, or salad potato. If you only have floury baking potatoes (such as white potatoes, or Maris Piper) you can still make this! Just par-boil for 7 minutes in boiling water with 3 tablespoons of vinegar and salt. The vinegar will keep your potatoes intact and crispy.

Instructions

Step 1
Heat 2 tablespoons oil in a pan and add the onion, fry for about 5 minutes until softened. Add the garlic, tomatoes, tomato purée, paprika, chilli powder and sugar and bring to the boil, stirring continuously. Simmer for 10 minutes until pulpy. Set aside for up to 24 hours.
Step 2
Preheat the oven to 180°C/200°C/gas mark 6. Take the cubed potatoes and pat dry with kitchen paper.
Step 3
Spread over a roasting tin and toss the potatoes in 3 tablespoons oil, season with garlic salt and pepper. Roast for 40-50 minutes until the potatoes are crisp and golden brown. Turn or toss the potatoes at least twice through cooking to ensure all sides are crispy. Remove and dust with the extra 1/2 teaspoom of smoked paprika.
Step 4
Gently reheat the sauce in a saucepan. 'Finish' with an extra tablespoon of olive oil. Tip the potatoes into dishes and spoon over the sauce. Sprinkle with the parsley

Serving suggestions

For an extra indulgent dish, feel free to deep fry the potatoes in refined olive oil! Or, add a few extra tablespoons of oil to 'finish' the final sauce. Fat is really the key to getting a restaurant style dish- so if you are making it for a special occasion, it could really make the difference. Also, since this dish is fairly simple, making sure to use good quality ingredients, such as an authentic smoked paprika, and a flavourful olive oil will really help.
Step 6
For an easy dinner, serve with fried eggs and a dressed salad. This is also a nice side for prawns, especially Spanish style grilled garlicky prawns in butter.

Cheat's Aoili (optional)

Aoili makes a good extra topping for this. You can find lots of easy aoili recipes to make with a food processor and a few eggs, OR make this simple Cheat's Aoili with mayonaise and a few simple ingredients

In a large bowl , whisk together 3/4 cup mayonnaise, 2 teaspoons of lemon juice, and 3 cloves of garlic grated on a microplane. Whisking constantly, slowly drizzle in 1/4 cup of extra-virgin olive oil. Season to taste with salt and pepper.
