1 Tbspmaple syrup
1 ½ tspcumin
coarse salt

2cans lentils
drained and rinsed
0.5red onion
chopped fine
60gbaby greens
13gmint leaves
Dressing
Instructions
Step 1
Preheat oven to 400 and prepare a sheet pan
Step 2
Toss carrots with oil cumin and maple syrup, then arrange on the sheet. Sprinkle generously with salt and pepper
Step 3
Bake for 40 minutes
Step 4
Once carrots have cooked, stir them with the lentils in a big bowl and let sit for 10 minutes
Step 5
Add onion, baby greens and mint.
Step 6
Make the dressing
Step 7
Pour over or toss with dressing and serve
