Instructions
Step 1
Preheat oven to 400°F
Step 2
For cinnamon mixture, combine cinnamon and sugar and mix will; set aside.
Step 3
Cut apple in very thin slices, removing core.
Step 4
Combine the skim milk, four, eggs, sugar, and salt, and mix until smooth; do not beat.
Step 5
Melt 1 tablespoon of the butter in a skillet, add the apple slices and sauté slightly. Pour the batter on top evenly.
Step 6
Bake in the oven about 10 minutes or until the pancake is puffy and nearly cooked. Sprinkle top with cinnamon mixture, dot with remaining 1 tablespoon butter, return to oven to brown pancake
Step 7
Before serving drizzle with lemon juice.
