Ingredients
4 servings
2 tspextra virgin olive oil
1 lbshrimp peeled and deveined
large, weight after peeled
1onion
medium, chopped
4cloves garlic
minced
2 tspfresh sage
chopped
2 Tbspbalsamic vinegar
½ cuplow sodium fat-free chicken broth
15 ozcan no-salt added cannellini beans
5 cupsbaby spinach
1.5 ozcrumbled reduced-fat feta cheese
Instructions
Step 1
Heat 1 tsp oil in a large non-stick skillet over medium-high heat.
Step 2
Cook shrimp until just opaque, about 2 to 3 minutes. Transfer to a plate.
Step 3
Heat remaining oil in the same skillet over medium-high heat and add onion, garlic and sage; cook 4 minutes stirring occasionally until golden.
Step 4
Stir in vinegar and cook 30 seconds.
Step 5
Add broth, bring to a boil and cook 2 minutes.
Step 6
Stir in beans and spinach and cook until the spinach wilts, about 2 to 3 minutes.
Step 7
Remove from heat and stir in shrimp.
Step 8
Top with feta cheese and divide in 4 bowls.
