Ingredients
4 servings
1 tablespoonolive oil
1 poundground chicken
2 clovesgarlic
minced
1onion
diced
¼ cuphoisin sauce
2 tablespoonssoy sauce
1 tablespoonrice wine vinegar
1 tablespoonginger
freshly grated
1 teaspoonSriracha
optional
1 x 8 ouncecan whole water chestnuts
drained and diced
2green onions
thinly chopped
1 headbutter
or iceberg lettuce
Instructions
Step 1
Heat olive oil in a saucepan over medium high heat. Add ground chicken and cook until browned, about 3-5 minutes, making sure to crumble the chicken as it cooks; drain excess fat.
Step 2
In a separate pan, cook onions until soft and then briefly fry the garlic. Stir in hoisin sauce, soy sauce, rice wine vinegar, ginger and Sriracha.
Step 3
Combine onion mixture with chicken. Stir in chestnuts and green onions and cook until tender, about 1-2 minutes; season with salt and pepper, to taste.
Step 4
To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf, taco-style
