Ingredients
2 servings
½ Tbspvegetable oil
2 cmginger
piece, cut into matchsticks
1garlic clove
chopped
0.5onion
thinly sliced
1 Tbspthai fish sauce
½ Tbsplight soft brown sugar
250gskinless chicken thigh fillets
trimmed of all fat and cut in half
125mlchicken stock
50ggreen beans
trimmed and cut into 2.5cm/1in lengths
1 Tbspcoriander leaves
to garnish
Instructions
Step 1
Heat the oil in a pan over a medium- high heat.
Step 2
Add the ginger, garlic and onion, and stir-fry for about 5 minutes or until lightly golden.
Step 3
Add the fish sauce, sugar, chicken and stock.
Step 4
Cover and cook over a medium heat for 15 minutes
Step 5
For the final 3 minutes of cooking, add the green beans.
Step 6
Remove from the heat and stir through half of the coriander.
Step 7
Serve with steamed rice and the remaining coriander scattered over, if you like.
