Put lard in skillet and pre-heat. As soon as lard melts, pour about 2 tbsp into batter, keeping about 1 tbsp in pan. Heat pan JUST to smoke point before filling with batter and put immediately into preheated 425° oven

Mix egg, buttermilk, cornmeal, cheese, and cream corn (and diced jalapeno if using) and pour into skillet
