Ingredients
4 servings
1 Tbspolive oil
8 ozCajun sausage
sliced thin
3cloves garlic
minced
1 bagfrozen pepper and onion blend
1 x 15 ozcan diced tomatoes
8 ozwhole wheat pasta
1 ½ cwater
Sauce
Instructions
Step 1
In a large sauté pan, heat the oil over Medium heat
Step 2
Add the sliced sausage and cook until brown
Step 3
Add the bag of frozen peppers and minced garlic. Cook until soft then set aside. Do not wash the pan!
Step 4
In a medium sauté pan, melt butter. Add in flour and whisk until it forms a thick paste.
Step 5
Slowly pour in the milk while whisking consistently.
Step 6
Bring milk mixture to a simmer. Add in cheese, spices and garlic. Whisk often until cheese is melted and sauce has thickened.
Step 7
Remove sausage and veggies from the first pan. Turn heat to Medium high, add the diced tomatoes, water and noodles.
Step 8
Cover and bring to a boil. The noodles will absorb most of the water by the time they are done.
Step 9
Add the sauce, sausage and veggies to the noodle pan. Mix well and serve.
