You can double the ham slices if you want more of its taste. One slice may not be enough. If you have too much béchamel sauce, keep it and make a cauliflower gratin (recipe on my profile)

Instructions

Sauce béchamel

Step 1
Plan on making the béchamel sauce ahead of time, maybe one day before. Add butter in a pan, add the flour, keep stirring with a whisk, on high heat slowly add the milk, keep stirring and add ground nutmeg (to taste). Don't forget salt and pepper. Keep stirring until it reaches ideal texture (not too liquid) (this takes a long time, trust the process)

Let it cool down and put in fridge.

Making the croque monsieurs

Preheat oven to 400°F (200°C)

Lay your bread slices on a baking sheet, spread a layer of béchamel sauce on each slice

Add ham and grated swiss cheese on the bottom slice

Top the bread and add grated swiss cheese and parmesan (optional) to each top slice

Put the croque monsieurs in the oven for 10 minutes or until bread is toasted and cheese is melted and bubbly
