Sauce béchamel
Step 1
Plan on making the béchamel sauce ahead of time, maybe one day before.
Add butter in a pan, add the flour, keep stirring with a whisk, on high heat slowly add the milk, keep stirring and add ground nutmeg (to taste). Don't forget salt and pepper. Keep stirring until it reaches ideal texture (not too liquid) (this takes a long time, trust the process)

Let it cool down and put in fridge.

Making the croque monsieurs
Step 3
Preheat oven to 400°F (200°C)

Lay your bread slices on a baking sheet, spread a layer of béchamel sauce on each slice
