Ingredients

1 ½ cupsdry black beans
1 cuponion
diced
3cloves garlic
minced
1 Tbshot chile
finely diced, jalapeno or serrano
1 Tbscumin powder
1 Tbschili powder
1 tspdried oregano
½ tspsalt
1 tsppepper
1 ½ cupswater
or just enough to cover all ingredients - more water will result in more yummy bean juice, less water will have thicker beans, but you want to make sure they don't get too dry
Instructions
Step 1
Pre-soak black beans for at least 8 hours by covering them with twice as much water as beans and putting them in the refrigerator. Add one tsp of baking soda for high altitude soaking. Once soaking is complete, rinse beans well and set aside.
Step 2
Turn the Instant Pot to sauté and add the diced onion, garlic, chile, cumin, chile powder, and oregano. Cook for about 2 minutes until onions begin to sizzle and spices release aroma.
Step 3
Add the rinsed beans, water, salt and pepper. Lock the lid and cook on high pressure for 6-8 minutes. Naturally release the pressure. Option to use an immersion blender or masher to give the beans a "refried" bean consistency.
