Instructions

Step 1
Slice potatoes along their length and boil until soft
Step 2
Finely chop the chives. Slice the red pepper into long pieces
Step 3
Boil eggs
Step 4
Drain potatoes. Add olive oil, half the chives, lemon zest, salt and pepper
Step 5
Make the dressing: In a bowl, add mayonnaise, lemon juice, the remaining chives, salt and pepper and mix
Step 6
Remove the skin on the mackerel fillets and discard, cut into bite size pieces
Step 7
Pile the watercress, potatoes, red pepper and mackerel onto plates, drizzle over the dressing
