Smoked Mackerel, New Potato and Egg Salad

Step 1
Slice the red onion finely, and place in a bowl. Pour over the vinegar and season with salt. Rub these together to incorporate and leave to pickle for a bit.
Step 2
Boil the new potatoes and eggs together. Remove the eggs after 8 minutes and give the potatoes another couple (or until tender).
Step 3
Peel the eggs and cut in half

Remove the onion and squeeze the liquid back in the bowl. This will be the base of the dressing. Set the onion aside.
Step 5
Finely chop the dill and add to the onion pickling liquor with the yoghurt and olive oil. Check seasoning.
Step 6
Cut the cucumber in half, scrape the seeds out and slice diagonally.
Step 7
Assemble the salad, layering the leaves, potatoes, cucumber and smoked fish. Top with the eggs, some more of the fish and drizzle with the dressing.
