Step 1
Cook the kale or cabbage for 2 min, reserve some of the water for later
Step 2
in the meantime, chop the garlic and onion, break up the bread into small pieces
Step 3
warm up a frying pan or a wok with the olive oil and fry gently the onion, garlic and bay leaves without burning
Step 4
add a few tablespoons of the cabbage water, throw in the bread and season.
Step 5
Drain the cabbage/kale and the black eye peas and add them into the pan, combine everything
Step 6
Check the seasoning, remove the bay leaves and serve
Step 7
you can top each portion with a fried egg and bacon (optional)
