Instructions
Step 1
In a pan, fry the beef and chorizo with 4 cloves of garlic, salt and pepper, 1 teaspoon of cumin and 1 tablespoon of smoked paprika.
Step 2
Once cooked, add in 1 teaspoon of turmeric, 1 teaspoon of oregano, half a packet of tomatoes, 2 chopped Peppers, 1 chopped onion and some chopped chillies (optional) and cook for 5 minutes until veg starts to soften.
Step 3
Then add a tablespoon of the tomatoe puree, the juice of one lime and the vegetable stock (leave 100mls or so to add throughout cooking if needed) . Then add in the rice.
Step 4
Simmer on low for around 25mins. Keep tasting the rice until cooked. Add more stock if needed.
Step 5
For the South West sauce - use half a tub of fresh sour cream, half a teaspoon of smoked paprika, a squeeze of lime juice and hot sauce if you want it spicy and a pinch of fresh coriander.
Step 6
Once cooked, served in a large dish with fresh chopped onion and a few tomatoes, South West sauce and wedges of fresh limes. Can also add some cheese to the top if you have it.
