Lasagne Classico with Spinach

The real thing from my Sicilian great grandmother Sadie. I like to soak the lasagne noodles in cold water for 20 min instead of boiling them, and prefer a slightly looser lasagne so i add a little more water or broth.

Ingredients

Sauce
1onion
med chopped
2 clovesgarlic
crushed
4 tblspsolive oil
1 x 28 ozcan diced tomatoes
2 x 6 ozcans tomato paste
½ cupwater
salt
to taste
½ tspdry basil
½ tsporegano
¼ tspcrushed red pepper flakes
Meat
1 lbground chuck
0.5 lbground pork
¼ cupparsley
chopped
2eggs
½ cupdry bread crumbs
fine
2 tblspsparmesan cheese
salt
pepper
Filling
Instructions
Step 1
Heat 2 tblsps olive oil in large saucepan. Saute onion & garlic over low heat until lightly brown. Add remaining sauce ingredients. Simmer, covered, 1hr.
Step 2
In large bowl, combine beef, pork, parsley, eggs, crumbs, 2 tblsps parmesan, salt & pepper. Heat remaining 2 tblsps oil in large skillet; saute meat over low heat until brown. Drain, add to sauce; simmer 15 minutes.
Step 3
Meanwhile, in 6 qts boiling salted water, gradually add lasagne so water continues to boil. Cook 20 minutes or until tender. Drain.
Step 4
Combine filling ingredients.
Step 5
In 13" x 9" x 2 1/4" roasting pan, layer ingredients starting with sauce, then lasagne, then filling; repeat until all used, ending with sauce. Top with remaining mozzarella.
Step 6
Bake in preheated 375 degree oven for 25 minutes or until browned. Let sit 10 minutes before serving.
