Ingredients

1can black beans
rinsed and drained
½ teaspoonchili powder
½ teaspooncumin
¼ teaspooncayenne pepper

0.5 pintgrape tomatoes
diced
1avocado
medium, cubed
1 cupshredded lettuce
4 ozfeta
crumbled
⅔ cupplain greek yogurt
½ cupcilantro leaves
packed, more to taste
1clove garlic
medium
½ teaspoonsalt

Instructions
Step 1
Preheat the broiler.
Step 2
Puree the black beans, chili powder, cumin, cayenne and ½ tbsp olive oil in a blender or food processor, adding a tablespoon of water at a time to help the mixture move. I pureed for a minute or two but still left some texture.
Step 3
With an immersion blender, puree the cilantro, yogurt, garlic, and salt.
Step 4
Place tortillas in the oven directly on the rack, taking care that the edges are supported (otherwise they will bend through the cracks and it will be bent in a funny shape). Let the tortillas bake for 3-5 minutes on both sides until they are browned and crispy.
Step 5
Top the crispy tortillas with black beans, tomatoes, avocados, and lettuce. Drizzle with cilantro sauce.
