GREEK-STYLE LAMB BURGERS WITH RED ONION QUICK PICKLE, GARLIC MAYONNAISE, AND CUCUMBER SALAD

Ingredients
4 servings

2cucumbers
medium, chopped

2 cupsbaby arugula

3 tablespoonsextra-virgin olive oil

1 tablespoonred wine vinegar

1 teaspoonfresh oregano
chopped

¼ teaspoonsea salt

¼ teaspoonfreshly ground black pepper

PICKLE
FOR THE QUICK

½ cupred wine vinegar

½ teaspoonsea salt

0.5red onion
thinly sliced

1 poundground lamb

4garlic cloves
minced

2 teaspoonsfresh oregano
chopped

1 teaspoonfresh rosemary
chopped

½ teaspoonsea salt

¼ teaspoonfreshly ground black pepper

MAYONNAISE
FOR THE GARLIC

½ cupMayonnaise
Homemade

0.5lemon
juice and zest of

1garlic clove
minced
Instructions
Step 1
TO MAKE THE QUICK PICKLE
Step 2
In a small bowl, whisk together the vinegar and salt.
Step 3
Stir in the red onion
Step 4
Cover and refrigerate for 30 minutes to 1 hour.
Step 5
Preheat the oven to 400°F.
Step 6
Put a baking rack over a baking sheet.
Step 7
In a large bowl, stir together the ground lamb, garlic, oregano, rosemary, salt, and pepper.
Step 8
Form the mixture into 4 patties, and put them on the rack.
Step 9
Bake until the lamb reaches 165°F, about 30 minutes.
Step 10
In a small bowl, whisk together the Homemade Mayonnaise, lemon juice, lemon zest, and garlic.
Step 11
Set aside to let the flavors blend.
Step 12
In a large bowl, toss together the cucumbers and arugula.
Step 13
In a small bowl, whisk together the olive oil, lemon juice, lemon zest, vinegar, oregano, salt, and pepper.
Step 14
Pour over the salad, and toss to combine.
