Ingredients

Beans curry

2 cupsbeans

1 table spoonginger

4 clovesgarlic

1onion

2tomato

Coriander
diced

3 table spoonsChilli powder
Traditional Indian hot curry

2bay leaves

½ teaspoonTurmeric

½ teaspoonGaram masala

2 springscurry leaf

2potatoes

Instructions
Step 1
Boil beans until soft and cooked. Add preferred salt while beans are boiling. This can be done a day before or before cooking.


Step 2
Finely dice the garlic and ginger.

Step 3
Dice the onions, tomatoes and coriander.

Step 4
Peal potato’s and cut into 4 quarters
Step 5
Heat oil into a deep pot. Add onions and cook until caramelised then add garlic and ginger and cook through.
Step 6
Add all spices and ensure the spices fry in the oil for less then a minute. Do not over cook as the spices will get burnt.
Step 7
Add diced tomatoes followed by boiled beans.
Step 8
Add water and ensure that water level is levelled to the beans in the pot.
Step 9
Cook beans for 10 mins and then add potatoes.
