Instructions
Step 1
Cook rice as per packet instructions. Finely chop the onion, then chop the cauliflower into small florets. Heat olive oil in a saucepan over medium heat. Add the onion and saute for 5 minutes, until softened. Add the tomato paste and cook for another 2 times, until darkened in colour.
Step 2
Add the cauliflower, chickpeas, tikka masala paste, coconut milk and water, then season with salt. Bring to a boil then simmer for 15 minutes, or until the cauliflower is tender.
Step 3
Divide the tikka masala and rice between bowls and serve.
