Step 1
Preheat oven to 350 degrees. Place the large cast iron skillet in the oven at start the preheat to 350°F. Place a separate non-stick skillet on the cooktop over medium heat. Once pan is hot, add EVOO. Add peppers and onions and cook until onions are soft, about 3 minutes. Add garlic and cook another 1 minute.

2. In a medium sized bowl, whisk together egg whites, eggs, oat fiber, yogurt*, parmesan cheese and pepper. Stir in onions, peppers, and garlic.

3. Lightly coat cast iron skillet with EVOO. Place spinach and ham in the cast iron skillet. Pour the egg mixture over the spinach and ham. Bake until eggs are set in the center, about 20-30 minutes. Serve warm.
