Cheesy Cauliflower Chicken Egg Bake

Ingredients

18 ozchicken
cooked
2 cupscauliflower florets
1 ½ cupslow fat cheddar cheese
1 to 1-1/2 g Fat per oz, mild or sharp, 1 leaner
8 Tbspparmesan cheese
grated
6eggs
1 ½ cupsunsweetened almond milk
2 tablespoonsfresh chives
finely chopped
1 packetStevia
1 teaspoonsoy sauce
condiment
½ teaspoongarlic powder
½ teaspoononion powder
¼ teaspoonkosher salt
½ teaspoonpepper
freshly ground
1 tablespoonolive oil
3 healthy fats
Instructions
Step 1
Preheat oven to 350º F.

Step 2
Whisk together olive oil, stevia, soy sauce, garlic powder and onion powder in a large bowl, then add chicken and cauliflower florets.
Step 3
Toss together until everything is evenly coated, then season generously with salt and pepper.
Step 4
Transfer to a large pan or skillet and cook on medium-high heat until cauliflower is almost fork tender.
Step 5
Transfer to a large baking dish and set aside.
Step 6
In a separate bowl, beat eggs and milk together, then stir in cheddar and parmesan cheese.
Step 7
Pour cheesy egg mixture over cauliflower and chicken and place baking dish in oven.
Step 8
Bake for 40 minutes, or until cauliflower is cooked through and egg is just set. (Optional: stir mixture in the middle to redistribute everything.)
Step 9
Remove from oven, garnish with chives and serve hot.
