Step 1
Preheat oven to 400F.

Heat a skillet over medium high heat and add oil. Season pork with poultry seasoning, salt, and pepper.

Sear pork on one side until brown, then place pan in oven until tenderloin is cooked through, about 15 minutes.

Let rest for 10 minutes, then slice.
Step 5
To make gravy, break up the sausage into pieces and sauté until browned. Add the flour and cook for 1 minute.

Add milk and cook until thickened. Season with salt and lots of pepper. Serve with chosen sides.
